Grandma’s Meatloaf

Ingredients

● 2 oz of finely chopped beef liver
● 2 lb of ground beef
● 4 cloves of minced garlic
● 1 yellow onion, minced
● 1 medium carrot, minced
● 1/2 small zucchini, minced
● 4 large capped mushrooms, minced
● 2 tsp of dry thyme
● 2 tsp of sea salt
● 1 tbsp of olive oil
● 2 tsp of dulse flakes
● 2 tbsp of gelatin
● 3/4 cup of cold bone broth
● 1 tbsp of bacon fat, for greasing

Preparation

1. Mix gelatin and broth, let sit at least 10 mins to let bloom

2. Saute carrot, onion, celery, garlic until tender

3. Add broth/gelatin and stir until dissolved (do not boil). Set aside to cool

4. Mix all ingredients together being careful not to overmix.

5. Transfer mix to greased loaf pan

6. Bake at 350F for about 75 mins (internal temp of 165F)
